Orange and Fennel Salad

This is an old family recipe from my Grandma Bolognone with the addition of fennel.  I love to make this salad.  Sometimes I put it on top of romaine as well.

Orange and Fennel Salad

Ingredients

  • 4-5 oranges peeled, white pith off as much as possible and sliced into wheels about 1/4 inch thick
  • One bulb Fennel, cored and sliced thin
  • Handful or two black olives
  • Olive Oil
  • Black pepper

Instructions

  1. Arrange the wheels of orange on a platter
  2. Spread the fennel over top
  3. Spread the olives over the fennel
  4. Drizzle the salad with olive oil
  5. Pepper it with freshly ground black pepper
