This recipe is REALLY easy and fast if you cheat like I did and buy the 10 minute farro from
Trader Joe's. Still easy without but will take 1-1.5 hours for your farro
to soften. This recipe is from Silver Spoon Cookbook. Italian cookbooks are the best place to start to
find farro recipes, I've found.
Ingredients
- 2 Tbsp olive oil
- 2 leeks, white part only, sliced
- 1.5 cups pearl farro
- 6.5 cups beef stock
- 2 Tbsp parmesan cheese, freshly grated
- Salt and pepper
Instructions
- Heat oil in a pan, add leeks and cook over low heat stirring occasionally for 10 minutes until golden brown
- Add the farro, pour in the stock
- Season with salt and simmer over low heat for 1.5 hours or until the farro is tender
- Season with pepper
- Ladle into a soup tureen and sprinkle with Parmesan
