Farro and Leek Soup

This recipe is REALLY easy and fast if you cheat like I did and buy the 10 minute farro from

Trader Joe's.  Still easy without but will take 1-1.5 hours for your farro

to soften.  This recipe is from Silver Spoon Cookbook.  Italian cookbooks are the best place to start to

find farro recipes, I've found.

Farro and Leek Soup

Ingredients

  • 2 Tbsp olive oil
  • 2 leeks, white part only, sliced
  • 1.5 cups pearl farro
  • 6.5 cups beef stock
  • 2 Tbsp parmesan cheese, freshly grated
  • Salt and pepper

Instructions

  1. Heat oil in a pan, add leeks and cook over low heat stirring occasionally for 10 minutes until golden brown
  2. Add the farro, pour in the stock
  3. Season with salt and simmer over low heat for 1.5 hours or until the farro is tender
  4. Season with pepper
  5. Ladle into a soup tureen and sprinkle with Parmesan
